Pancakes with tuna


Ingredients list: 

- 500 g flour
- 1 packet of baking yeast
- 3 onions
- 2 cans of tuna

- 1 bunch of parsley
- 100 g pitted olives
- Cumin, paprika
- Peanut oil
- 2 egg yolks
- Salt and pepper

Preparation:

first prepare the batter by mixing the flour, salt and yeast by pouring a little warm water. knead the dough until it becomes elastic. make small balls the size of a tangerine and coat with oil. let rest and prepare the stuffing in the meantime. For this, fry the chopped onions in a little oil until they are translucent. Finely chop the parsley and olives cut into slices. add onions. add the tuna and spices. saute together for about 5 minutes.

take the balls one by one and spread it on a work surface oiled. flatten with oiled until the batter is very thin fingers. put some stuffing in the middle and fold the center to the two opposing overlapping edges. do the same in the width direction. we obtain a square that flattens slightly, brush with egg yolk. place on a greased baking sheet and place in a medium oven until browned.
